It really depends which car you use. The easiest one is the E30 M3, I had some problems with the KTM X-bow (well, I made the 100k event but the car is terrible for drifting but on the positive side, there is almost no way to crash or go out of the track). Of course drifting with the Abarth 500 etc. is almost impossible.
It has been said but the E30 drift is the best car to learn drifting with. Best way to learn handling is to drive hard. Drifting is useful to know, but it isn't very relevant in racing conditions. My recommendation is driving any track with the BMW M235i. It's a pretty neutral car.
Project cars 2 has been the closest to the real thing but I’ve also tried Car X Drifting, Assetto Corsa and a few more but I can’t seem to find something solid unless my settings are off or I’m choosing the wrong vehicles or whatever. Pls halp.
A buddy just recently drove a Porsche GT3 (non RS) at the Porsche Driving Experience and he had to help the steering wheel rotate while trying to drift. Apparently at least in that car (from what the instructor said) this is normal behavior. Hilarious because this is very similar to how the G29 behaves.

Too much will result in twitchy steering. -0.1 to -0.3 is a good range. Rear toe in (positive) for stability and better forward bite. Too much will straighten the car when off throttle. +0.1 to 0.2 or up to 0.3 for high power FD style mods. Wheel settings are preference but defaults work fine for T300RS.
